Soft Set Wildflower Honey
Soft Set honey or historically known as ‘creamed honey' is produced by the bees during the spring and summer months. It differs from usual honey in that the crystallisation process has been controlled to form the smallest crystal size. A small amount (about 10%) of honey with a soft, fine grain, is used as a 'seed' for liquid honey. this is added to the runny honey stirred multiple times over the next day or so before jarring. the temperature is controlled allowing the honey to set. creating a smooth buttery honey. It is spoonable and spreadable, it feels like velvet on the tongue because the crystals are so fine (hence creamy) and it remains looking good for a long time. best stored at 10C
